Guacamole and Salsa Recipes

Edith's Guacamole

  • 1 pound of green husk tomatoes (tomatillos), without husks, cooked and drained
  • 6 avocados
  • 1 small clove garlic
  • 10-12 branches of cilantro
  • salt, lemon juice
Blend with a tiny amount of water (1/2 cup?)
Note: you can also use raw tomatillos which helps to keep guacamole from turning brown so fast.


Easy Green Salsa

  • 1 pound green husk tomatoes (tomatillos), without husks, cooked in water with 2-4 jalapeno peppers.
  • Drain, and add a small raw clove garlic and 8 sprigs or more of cilantro, and salt to taste.


Easy Red Salsa

  • Cook 6-8 red tomatoes with 2-4 jalapenos. Drain, and mix with 8 sprigs cilantro, 1 small raw garlic clove and salt.
